New York Chocolate Sour

Ingredients
- 50 ml Haynes rum
- 30 ml lemon juice
- 20 ml John’s sugar syrup
- 20 ml scavi & ray al cioccolato
- 1 protein (optional, for better foam)
preparation
- Prepare ice cream: fill a shaker with ice cubes.
- Add ingredients: pour 50 ml Haynes rum, 30 ml lemon juice, 20 ml of John’s sugar syrup and 20 ml scavi & ray al cioccolato in the Shaker.
- Add protein: If you want a better foam crown, add the protein.
- Shake: shake the mixture vigorously, first without ice (dry shake), to emulsify the egg whites well, and then with ice until the mix is well cooled.
- Strain: Be the mixture in a chilled cocktail glass.
- Garnish: Optionally decorate with chocolate shavings or a lemon disc.
