What are syrups?
Sirup (from Mittellatinisch Siropus, Sirupus Sirupus of Sweet Healing Pot) is a viscous, concentrated solution (concentrate) that is obtained by cooking and other techniques from sugar -containing liquids such as sugar water, sugar beet juice, fruit juices or plant extracts. Due to its high sugar content, it can be kept for a long time even without cooling.
Nowadays, the syrup is less about durability, but rather about the compressed bundling of flavors. Sirup takes into account in various areas of culinary delights. They are used to flavor drinks and cocktails, but are also popular to refine foods such as desserts.
In the beverage industry, the dominant upstart of the syrup is the so -called Lime Juice Cordial.
history
One of the oldest companies that produced Lime Juice Cordials is Rose, founded in 1865, the L. Rose & Company company.
In 1867 the Merchant Shipping Act was adopted, which committed all Royal Navy ships and all British merchant ships to serve the team in daily rations. This served as a prevention for widespread disease scurvy due to vitamin deficiency. Since lime juice at sea quickly spoils, Lime Juice Cordial was used because the sugar contained preserves the juice.
Raw material & production
The product that syrup made possible is therefore the sugar.
In the production, syrup is mixed with a lot of sugar by boiling water or water juice. As a rule, the ratio of liquid and sugar is 1: 2.
For fruit syrup, the fruits are first cooked with water to withdraw the fruit juices and flavors. In a second step, this mixture is moved with sugar and cooked again.
use
Sirupe can be used as an additional flavor carrier for different drinks.
A trend that has been found in the gastronomy are even lemonades created. With the help of syrups, a variety of homemade lemonades can be made in order to be able to operate the various tastes of customers.
In the coffee industry, too, syrups are now a constant tool to attach an individual touch to the basic product. For example, the well -known "Caramel Macchiato".
Of course, syrups are also part of the basic equipment of every bar. With the help of a wide variety of flavors, the creativity of the bartender is not a limit. Sirupe and cordials are used in countless cocktails.
