Our distillateur checks the process closely. A soft spirit is created by multiple circulation. We only use the middle run (Heart) for the perfect balance between alcohol content and botanicals. The gin matures with the botanicals for seven days to develop its full aroma. We dilute it to 42% alcohol with spring water. Our ingredients such as sea fell, elderflower and Boadicea hops are harvested locally. The rest comes from an ethically responsible father-son partnership. Mermaid Gin is a London Dry Gin with 100% natural ingredients, without additives.
